The global food system, particularly animal agriculture, is facing significant sustainability challenges. Traditional animal farming is a major contributor to climate change, deforestation, and biodiversity loss, with animal agriculture alone responsible for 14.5% of global greenhouse gas emissions. Additionally, the resource inefficiency is staggering - livestock takes up nearly 83% of the world’s agricultural land yet only delivers 18% of global calorie supply. As a result, there is an urgent need for scalable, sustainable protein alternatives that reduce environmental impact and meet growing global food demand.
Nutropy, a French biotech company, uses precision fermentation to produce bio-identical caseins, the key proteins in cow’s milk, that can be used in the formulation of “cheeseable milk,” a plug-and-play solution for dairy producers seeking to create animal-free cheeses with the same texture, taste, and melting properties as conventional cheese. This approach allows for easy integration into existing cheese production processes without requiring changes to equipment or recipes.
